    Ingredients

    • 4 eggs
    • 2 springs green onion, chopped
    • 1 garlic clove, sliced
    • Cooking spray

    For the sauce

    • 4 tsp light soy sauce
    • 2 tsp dark soy sauce
    • 2 tsp rice vinegar
    • 1 tsp oyster sauce
    • 2 tsp cornstarch
    • 2 tsp ketchup
    • 150 ml water
    • 2 tsp Splenda Granulated

    Instructions

    Heat the cooking spray in a non-stick frying pan and fry the eggs until hard. Remove the eggs from the pan.

    In a separate bowl, combine all sauce ingredients and mix well. Set aside.

    Use the same non-stick frying pan and heat again with cooking spray. Add the green onion and garlic and fry until fragrant. Place the fried eggs back in the pan and add the sauce. Let this thicken on medium heat.

    Serve over rice and (if desired) with some additional chopped green onion.
