- 125 g cold, unsalted butter cubed

- ½ large egg yolk
- 1-2 teaspoons milk/non-dairy milk (as needed)

Add the vanilla extract and egg yolk and mix again. If the dough doesn’t come together then add a little bit of milk, a teaspoon at a time until the dough clumps together.

Shape the dough into a disc, wrap in clingfilm and put them in the fridge for half an hour.

Roll the disc out on a lightly floured surface to about 0.5 cm to 1 cm thick and use floured cutters to cut out your choice of shapes.

Place them slightly spaced apart on a couple of baking trays lined with baking parchment.

Place the baking trays in the freezer for 15 minutes while you preheat the oven to 180°C.

Bake the frozen biscuits for approximately 7-10 minutes, or until golden.
