- 150 g fresh white breadcrumbs
- 175 g reduced fat shredded vegetable suet
- 175 g currants
- 175 g raisins
- 175 g sultanas
- 75 g candied peel, chopped
- 25 g ground almonds
- 3 medium eggs, beaten
- 450 ml skimmed milk
- 6 tablespoons SPLENDA® Granulated

Beat together the eggs and milk and stir in to the dry ingredients.

Grease 2 x 700 ml basins. Spoon the mixture into the basins to about two thirds the way up and level the surface. Cover the tops with non-stick baking parchment, pleated in the middle to allow room for the pudding to rise slightly and tie round with string or elastic. You may find it useful to put a loop of string under the basin for ease when lifting it out of the hot steamer. Cook in a steamer for 5-7 hours according to the darkness of colour required.
Tip
To reheat steam for 1-2 hours or microwave on high for 4-5 mins or until piping hot.
