- 2 large ripe mangos, peeled and roughly chopped
- 2 tbsp SPLENDA® Granulated
- 2 egg whites
- juice of 1 lime
- Put the mango and SPLENDA® Granulated in a food processor or liquidiser and blend until smooth.
- Add the egg whites and lime juice then blend to combine.
- Pour the mixture in to a shallow freezer proof container and freeze for 1 hour.
- Remove from the freezer and mash or whisk to break down large crystals.
- Return to the container and freeze for at least 3 hours until solid.
- Alternatively follow manufacturer’s instructions for an ice-cream machine.
- To serve, remove from freezer to soften 10 minutes before scooping. Decorate with mint leaves (optional)
