Cut the ginger into small pieces. Add the ginger to a blender with 40 ml water and blend until smooth. Pass through a fine sieve or cloth.

Combine half of the simple syrup with the ginger juice and lemon juice in a glass. Add ice and top off with sparkling water. If desired, add the remaining simple syrup to make it sweeter.
