Plum Jam

Makes: 48 (1 tbsp) servings or 3 small jars
Preparation time: 30 minutes

Cooling time: 4-5 hours
Ingredients:
1-kg/2lb plums
25g/1oz SPLENDA® Granulated
1 tbsp lemon juice
2 tbsp water
125ml/4fl.oz liquid pectin
Method:
1 Wash jars and lids or screw bands in hot soapy water; rinse with hot clean water. Sterilize jars using any one of the methods described below. Ensure that jars are dry before filling.
2 Wash and drain plums. Put plums and water into a large heavy based saucepan or preserving pan. Cover and cook over medium-low heat for 15 minutes until fruit is soft, stirring occasionally.
3 Take off heat, allow to cool before removing skin and stones from fruit.
4 Return to heat and bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat and boil for 5 minutes, stirring constantly. Remove from heat. Stir in SPLENDA® Granulated, lemon juice and liquid pectin. Skim off any foam with metal spoon.
5 Ladle immediately into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly.
6 Leave to cool, then label and refrigerate.
Sterilisation Methods
A Bring boiling-water canner (or large saucepan), half full with water, to a simmer. Place jars and lids in canner and let stand in hot water until ready to use. Drain well before filling.
B Put the glass jars and lids into an oven at 120°C/110°C Fan/Gas Mark ½ for 20 minutes.
C Fill glass jars 1/3 full of water and place in microwave. Fit as many as comfortable allowing space between them. DO NOT PUT ANY METAL OBJECTS IN THE MICROWAVE. Microwave on high power for 2 minutes or until water boils. Reduce to medium power and simmer for a further 1 minute. Leave to stand for at least a further minute before removing from microwave. Drain well before filling. Metals lids can be sterilised by placing them in a saucepan and pouring boiling water over. Leave in water until required then drain well.

Tip

This is a soft set jam so only take out of the fridge as required. Consume within 1 month. Using SPLENDAŽ Granulated means that the jam will not necessarily reach the normal jam set temperature and cannot be tested for set by usual methods.
