Ingredients:
- 210g plain flour
- 9 tbsp SPLENDA® Granulated
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- ½ tsp ground cinnamon
- 25g chopped walnuts
- 100g dried cranberries
- 150ml unsweetened orange juice
- 5 tbsp 0.2% fat fromage frais
- 1 tbsp low fat margarine, melted
- 1 egg
Method
- Preheat oven to 200°C/190°C Fan/Gas Mark 5.
- Place 9 paper muffin cases in a muffin pan.
- In a large bowl combine the flour, SPLENDA® Granulated, baking powder, bicarbonate of soda, and cinnamon. Stir in the walnuts and cranberries.
- In a small bowl, combine the orange juice, fromage frais, margarine, and egg.
- Add the liquid mixture to the dry mixture and mix gently to combine. Divide the mixture between the muffin cases.
- Bake for 15 to 20 minutes or until a toothpick inserted in centre comes out clean.
- Place muffin pan on a wire rack and cool for 5 minutes. Remove muffins from pan and continue cooling on wire rack.
