Cranberry Sunshine Muffins

Ingredients:

  • 210g plain flour
  • 9 tbsp SPLENDA® Granulated
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp ground cinnamon
  • 25g chopped walnuts
  • 100g dried cranberries
  • 150ml unsweetened orange juice
  • 5 tbsp 0.2% fat fromage frais
  • 1 tbsp low fat margarine, melted
  • 1 egg

 

Method

  1. Preheat oven to 200°C/190°C Fan/Gas Mark 5.
  2. Place 9 paper muffin cases in a muffin pan.
  3. In a large bowl combine the flour, SPLENDA® Granulated, baking powder, bicarbonate of soda, and cinnamon. Stir in the walnuts and cranberries.
  4. In a small bowl, combine the orange juice, fromage frais, margarine, and egg.
  5. Add the liquid mixture to the dry mixture and mix gently to combine. Divide the mixture between the muffin cases.
  6. Bake for 15 to 20 minutes or until a toothpick inserted in centre comes out clean.
  7. Place muffin pan on a wire rack and cool for 5 minutes. Remove muffins from pan and continue cooling on wire rack.
